Once the extraction process is finished, the honey is stored in hermetically closed drums, and these are deposited in another sector of the room (drum deposit). Likewise, they are labeled according to their floral origin, to later facilitate the selection of the drum that must be “fractionated” and comply with their respective traceability; In any case, an analysis of the honey can be added to corroborate or to verify some other characteristics (according to customer requirements).

The fractionation process that receives the honey is very simple since it is carried out in its natural state (raw), just as it is obtained after its extraction. Said fractionation is carried out in “PVC containers” and “glass containers“, without receiving any intermediate process that could alter its organoleptic characteristics.
It is important to highlight the aforementioned detail, since many honeys are pasteurized before fractionation and when carrying out this process with high temperatures, its composition “breaks”, thus losing many properties and going from a natural food to being just a sweetener.
For this reason, our honey is only filtered, thus allowing after a certain time, its crystallization again; thus demonstrating its naturalness and guarantee of purity.
